Everyone photographs the skyline of Yazd for its towers, those tall slotted chimneys called badgirs, the windcatchers that rise from the rooftops of this mud brick city on the edge of the desert. What almost nobody realises is what they were part of. In one of the hottest, driest places people have ever chosen to live, the Yazdis worked out how to make and keep ice through the summer using nothing but air, earth and water, and no fuel at all.  The towers everyone points a camera at are not decoration. They are the visible top of an invisible machine, a whole desert town engineered to breathe cool air, built centuries before anyone had a fridge.
