Morocco's national drink is only about 170 years old, and it isn't even Moroccan tea. During the Crimean War in the 1850s, British merchants found their usual markets in the Baltic and Russia blocked, so they redirected huge shipments of gunpowder green tea to Essaouira and Tangier instead. Moroccans already had a strong mint tradition, and the two combined into the ritual known today. Even the famous high pour, holding the pot a foot above the glass, has a practical root, it aerates the tea and creates froth, and was originally used by Sahrawi desert nomads to check the tea hadn't picked up sand.
