Those perfect pastel domes stacked in a patisserie window are a good deal newer than they look. The plain almond biscuit is centuries old, but the sandwich version everyone pictures, two shells with a filling of ganache or buttercream, only arrived in the 1920s, credited to Pierre Desfontaines at Ladurée. The biscuit's best documented earlier chapter is humbler still: during the French Revolution two Carmelite nuns turned out of their convent in Nancy baked and sold plain macarons simply to survive, and are still remembered there as Les Sœurs Macarons, the Macaron Sisters.

This 15cm square greeting card is an original hand painted watercolour of a stack of macarons, and is blank inside for your own message. It comes with a brown kraft envelope and is supplied in a cello bag to keep it protected.
