Monks at the Jerónimos Monastery in Belém used egg whites to starch their habits, and rather than waste the leftover yolks, they turned them into custard and baked it into pastry. When Portugal dissolved its monasteries in 1834, the monks had no income left and sold their recipe to a local merchant, who opened the Fábrica dos Pastéis de Belém in 1837. It's still there, and the exact recipe is still a secret, known only to a handful of pastry chefs who work in a locked room and sign a contract promising never to tell.
