The smooth, melting texture everyone now takes for granted in a good bar of chocolate didn't exist until 1879, when a Swiss chocolatier named Rodolphe Lindt stumbled on a process called conching, hours of slow heating and grinding that transformed chocolate from a gritty, crumbly paste into something silky. Cologne's Chocolate Museum, opened in 1993 by a chocolate manufacturer who had always dreamed of a fountain that ran with the stuff continuously, now tells that story to over 650,000 visitors a year, and remarkably pays for itself entirely through ticket sales, a rarity for any museum anywhere.
