The answer is breakfast. When Ming dynasty builders needed a mortar strong enough to last, they boiled up sticky rice, the same glutinous rice you eat with dumplings, and stirred the milky soup into their slaked lime. In 2010 a team of chemists at Zhejiang University worked out why it holds so well: a starch in the rice called amylopectin threads itself through the lime as it sets, keeping the mineral crystals tiny and tightly packed, so the mortar cures denser, more water resistant and far tougher than plain lime ever could. The Ming sections built with it have shrugged off earthquakes, weeds and even a bulldozer, while stretches without it have long since crumbled. The guidebooks tell you the Wall is visible for thousands of miles.
